Grace Allen:
Grace Allen is the
founder and head instructor at PACC. Born and raised
in Taiwan, she has extensive experience with
traditional Chinese foods. Because of the earlier
Japanese occupation, Sashimi and Sushi are also
very popular dishes there and formed part of her
heritage. Grace has a BA degree in accounting and
together with her husband had extensive business
relationships in many places in the Far East,
including Hong Kong, Taiwan, Thailand, Korea and
China. This gave her ample opportunity to study the
genuine ethnic food and cooking of those countries.
In 1990, her family
moved to England where she worked in a small
antiques shop specializing in imported furniture
from the Far East. In 1994, her family moved again
and came to America. After several years in the
wholesale restaurant supply business, Grace also
owned a Chinese Restaurant, which she ran for the
last 8 years and also became a partner of a Japanese
Steak House in Kansas City.
Eric Wang:
Grace’s brother, Eric, came to
USA in 1980 where he and his brother invested in a
business growing bean sprouts and making tofu.
Together they ran this business for 20 years, first
in Dallas and later in Atlanta.
Eric then became a partner in the
Japanese Natori restaurant for 2 years. Here he
gained much experience in making well over 10,000
rolls and sushi!
Subsequently he, with his wife Karen, owned and
operated the China Pearl Restaurant , on Mansell
Road in Alpharetta for 4 years This has recently
moved to 2500 Old Alabama Road in Roswell, where
these first PACC classes are held.
Phil Lin:
Phil Lin, a real
lover of Japanese cuisine, received his early
training at the Academy of Maritime Sciences in
Taiwan. He specialized in food and nutrition
available from the bounty of the ocean. For almost
10 years he worked in Atlanta as a chef of Japanese
cuisine. The for 20 years he has owned and operated
Daruma, and Tokyo Steak Japanese Restaurant on Jimmy
Cater Blvd and Tokyo Steak on Douglasville (The
busiest and most popular Japanese Restaurant in
town). Chef Lin is a visiting Sushi instructor at
the Pan Asia Cooking Classes. On April 23, 2006 he
will teach a 2 and half hour class on sushi making. |
